Hello, I am open to any feedback. This PR is a continuation of the work on #28172 which sort es/_toctree.yml like en/_toctree.yml, with the addition of the Spanish version of performance.md.

My only doubt in the translation is that the links to the other files mentioned are correct, since these files are only found in the
English documentation. Thanks.

The docs for this PR live here. All of your documentation changes will be reflected on that endpoint. The docs are available until 30 days after the last update.
