build(deps): bump ansi-html and gatsby

Removes [ansi-html](https://github.com/Tjatse/ansi-html). It's no longer used after updating ancestor dependency [gatsby](https://github.com/gatsbyjs/gatsby). These dependencies need to be updated together.

Updates `gatsby` from 4.17.1 to 4.25.8
