allows for collapsible admonition blocks https://squidfunk.github.io/mkdocs-material/reference/admonitions/#collapsible-blocks also alphabetized the list of extensions

This looks really good! I like the how-to style, everything is goal/action focused.
I haven't had a chance to install and test docker with colima, but the commands in our docs match what I see in colima's docs 👍 Once I install it, if I notice anything else that would be helpful to document, I'll add it, but for now this looks good.
