I'm merging this PR, but in the next release I'm going to drop all those env-specific values in favor of plain list of env variables (which is now supported under the env.custom key).

Anyways, this PR is very useful, because what I'm going to do is move all this information right into the anycable docs and keep the reference to that documentation here. This would reduce the necessity of the chart's support for future versions of anycable.
