Note that the minimum supported Node.js version is now v18, as v16 is now end of life.

Manual port of #3329 to
dspace-7_x.Note that the minimum supported version of Node.js is now v18 LTS, as the previous v16 LTS is end of life. We will need to update documentation for the DSpace 7.6.3 release. We might even want to update our CI for DSpace 7 to use v18 and v20.
