 In order to remove the express card icon (or get full access to your filesystem) in Big Sur you will need to jump trought a [few hoops](https://github.com/fxgst/writeable_root). Please note that breaking the seal on the filesystem macOS updates may not install, or install properly. It is also not possible to reseal it afaik. You can also use the scripts from [this](https://github.com/Ausdauersportler/big-sur-micropatcher#modifying-the-system-volume-yourself) repo. Use a tool to hdie icon instead and leave your system as secure a possible with the filesystem sealed and SIP enabled.
