we have custom CMake modules in the modules folder.

However, they're not installed currently.

We should make it more convenient for users, and install them to the appropriate location.

Ideally it would also be enough to do target_link_libraries(my_target xtensor-io), however then it might not be modular to have OpenImageIO but not libsndfile etc...
