Show Dynamic logo in admin ui

Hi,

We're trying to use vendure in a multi vendor setup, we would like to show a different logo in the admin panel based on the logged in user channel.

However it seems like app-shell is fixed to a single static logo image.

Is there a way to override app-shell component?

if not I would like to create a small PR for allowing the logo field to be dynamically set somehow if you're interested, I'd appreciate if you could give me directions.
