Where to set the deployment.environment variable when deploying APM for k8s?

Running the workshop, I got to this step:

Where it says

If you are doing this workshop as part of a group, before the next step, add your initials do the APM environment: edit the py-deployment.yaml below and add your initials to the environment i.e. change all instances:
deployment.environment=apm-workshop
to
deployment.environment=sjl-apm-workshop

There are no occurrences of deployment.environment in k8s/py-deployment.yaml
I skipped that step and created the application, but I cannot see any data in the Dashboard in Splunk cloud.
Where do I set the environment variable?
