- 1/2 cup butter
- 1/2 cup water
- 1/2 cup milk
- pinch of salt
- 2 tsp - 2 tbsp sugar
- 1 cup flour
- 4 large eggs
- 1 egg
- 1 tablespoon water
Mix butter, water, milk, salt, sugar, and flour in a saucepan.
Heat on medium heat until incorporated.
Continue to cook the batter, pressing it out with the back of a spoon to cook evenly.
Continue to cook until a thick skin has formed on the pan.
Transfer to a bowl, shape to cool for at least 3 minutes.
Add eggs one at a time, mixing thoroughly between each addition.
Pipe 2 inch mounds 1 inch apart on a greased pan or wet parchment
Bake at 400 for 20 minutes with a moisture source
Without opening oven, reduce heat to 350 and continue to bake for 10-15 more minutes.
