In the Webmail of the provider, sub-folders are sorted correctly (in Thunderbird too).
Sort order doesn’t match mailbox number (so that doesn't seem to be the cause of the bug).

After a night's rest, my Nextcloud sorts the sub-folders correctly. 🙂
However, I'm waiting for an opinion from the development team before closing the issue.

Open mail app and see the navigation panel

Sub-folder shoul be sorted by name
