Hi,
The link you've provided does not work for me however I believe you are referring to this Uni-T UT61B on Amazon.
A bit of Googling discovers this awesome blog-post - https://lukasschwarz.de/ut61b
By that read it looks like the chipset used in this product is the Fortune FS9922-DMM3 that is not (currently) listed - https://digital-multimeter.readthedocs.io/en/latest/docs/supported-multimeters/
Reading the blog-post above the protocol reverse-engineering is very very similar to the Fortune FS9721 that is already supported and it makes be believe it should be fairly easy to add this chipset - check out the code for the existing chipsets - https://github.com/ndejong/digital-multimeter/tree/main/src/digital_multimeter/multimeters
