Language for Thank you letters

Need way to discern which language to send thank you + donation confirmation emails/letters in. For new donors, who aren't subscribers, how can we capture their preferred language?

Looking for a 'locale' or 'preferred language' field to be coming over with the donations (i.e. tied to the opportunity, not the contact) and recorded in SFDC, especially PayPal....does this exist? (For Stripe donations, we may be able to parse and use the donation URL field, if it's populated consistently - ??)
