But still Chinese, Japanese and many other country tiles get rendered in their respective languages. Does anyone know how to tweak the osm-bright style sheet so that tiles are rendered in English only?

This is likely a case of missing translations in the source OpenStreetMap data. OSM does not have complete translations for every language. For English I would expect translation coverage of major city names to be fairly good, but don't expect much else to be translated. Labels for things such as roads and points of interest have hardly any translations except for the most well-known or those in multilingual cities/neighborhoods.

@name attribute set to [name-en]
