I'm hoping I missed something in the documentation. It seems there should be a view helper available to simplify the code below.
<%= d.fields_for :incidents do |incident| %> <%= incident.object.enums(:incident_type).label(incident.object.incident_type.to_sym) %> ...

There's a slightly shorter form:
incident.object.incident_types.label(incident.object.incident_type)
But I'd have to agree that it's still not as ideal as something like:
incident.object.incident_type.label
