https://github.com/pydantic/pydantic-ai is very promising, and can be a much better base than Instructor. It's not quite ready yet, but when it is, I'd like to move to using it.

Remove Gemini models and add chatgpt-4o-latest.

The Gemini models are broken. I don't intend to fix this until #13 (switch to Pydantic AI).

The ChatGPT model is supposed to be quite good, as it keeps getting updated.
