Tasks:

folder docs + multiple files inside with separate sections for
- configuration:
- installation flow (description)
- troubleshooting
- access to logs + grafana
- (alerting + monitoring) when Enable alerting and monitoring for extension #37
validate it is up to date:
for local development
for AWS setup (e.g. running E2E tests there)
