We currently have a growing list of environment variables that are needed to deploy and we should document those so people know what to set. Also, make sure to include any defaults if there are any.

Super agree with this. I would also love for us to have this app be as simple as docker compose up -d for anyone to try it (which presently, it does!) so might it be worth coming to agreement on that and then documenting that as a Decision®?
