\ingredients{
1 & turkey or chicken carcass \\
1 & onion \\
4 & ribs celery \\
1 & carrot \\
4 & cups chicken stock \\

Slice vegetables in large pieces. Sauté in a stock pot over medium low heat with olive oil until onions are translucent and just starting to brown. Add chicken carcass and enough chicken stock to cover with two inches to spare.
Simmer gently for one hour. Add salt and pepper to taste.
Strain liquid through a fine mesh stainer and return to the pot.

1 & pound rice noodles \\
1 & onion \\
8 & scallions \\
1 & bunch cilantro \\
1 & bunch Thai basil \\
1 & package bean sprouts \\
3 & Serrano chilies \\
}
Soak rice noodles and put in empty bowls. Add simmering broth. Slice vegetables and add to individual soup bowls at the last second.

Add to taste.

Other ingredients to try are minced garlic fried in oil, dried shrimp, sliced beef or chicken.
