Endpoint for redemptions #12

Rebalancing was replaced by redemptions. Please create an endpoint that returns user related redemption info.

inputs - user address, collateral address/symbol, start timestamp
output - collateral sold, bnUSD repaid

similar to https://balanced.sudoblock.io/api/v1/docs#/stats/get_stats_rebalanced_api_v1_stats_rebalanced_get

Still valid and needed unless there is a way to check the data on the loans contract directly
