На данный момент пришлось поменять названия .env файлов, теперь:
Для локального - local.env,
Для деплоя - .env
т.к. docker-compose по дефолту ожидает файл с таким названием и без этого изменения он читал локальные переменные окружения, которые до этого в .env

сервис Бд тоже берёт энвы из .env, но можно и передавать через -e
