produces a neat and tidy .md file containing all installed extensions split into two groups:

I suppose that such a feature- to export list of all installed extensions in .md format would be a nice addition to chromium-web-store

I'd actually recommend adding a page for listing the extensions (I know there already is one by default) that also includes Download/Export Extensions as List / Markdown (Markdown won't allow export unless you want to add that)
