As it is set up, the config for the X keyboard mappings is set in /etc/xdg/lxsession/LXDE/autostart, which is silly. Put it in ~/.config/lxsession/LXDE/autostart (or elsewhere under ~). Give students a guide on how to change this config if need be.

Also, support Mac keboards out of the box. This probably requires adding a "Mac DK" and "Mac US" icon so that it shows up pretty in the bottom right corner.

Depends on #2.
