As stated in the recent post on forum:

“Official” support for Windows was discontinued.

I experienced issues on several windows build (Add API 630, Directory Layer). Should we remove the Windows target? I can do it if you want.

Well, we could just do a PR on the foundationdb-rs repo to remove the windows-latest. I can also do it, that will allow me to be a committer on the project that can trigger GH actions without a click from a maintainer 🎉
