I just lost a few stacks of the latter as I tried out Peddler. I had unchecked 'auto-selling poor items' on the first char and was assuming this setting would be applied globally, which obviously was a wrong assumption. (My poor-item-selling is already managed by ArkInventory, where I have these items in separate, non-selling, categories.)
There might be edge cases where you want to auto-sell poor items on one char but not on others, but I think that in >98% of all cases where I decide for that option I want this to be applied to all chars. And, of course, it should be unchecked by default.

I do wish we could have a global profile in general, not for this issue in my case, but more for not having to mark things as vendor across multiple characters when I go xmog hunting.
The setting to auto-sell Poor Items really should be an account-wide setting, especially since Blizz decided to convert certain poor items into a currency for pets. But also because of little fun items like Empty Brew Bottle.
